I love Costco. It’s a great guilty pleasure. Not only can I get a hotdog and soda for $1.50, which I occassionally do, I also get to browse a fun and vast array of books. It gives me the chance to look and buy some usually expensive books, like say cookbooks for instance, at a “well, might as well try it” rate.
My last Costco splurge was for this Weight Watchers One Pot Cookbook. Mostly because the photo on the cover is gorgeous. I even love the color of the Dutch Oven.
There are some beautiful pictures of food inside and the cookbook is organized by pot- In A Bowl, In A Skillet, In A Wok, In A Dutch Oven, etc. All the recipes seem relatively easy to make. Which, let’s remember, is good for me considering I am no Master Chef, though I may have felt like one after that Roast!
So what did I try from this beautifully laid out book?

Fast, easy and I love me some phyllo dough.
Next time, I should find a smaller casserole dish. As you can see I pushed it to the side so it’s not as pretty as it could be.
Overall, the dish was tasty enough and light. It was easy on the cheese, as this is a lower fat recipe. Personally, I love a lot of cheese, but it satisfied a craving and didn’t leave me feeling guilty about it. Hubby even ate the left overs.
